Menu Plan Monday...er Tuesday!

So, I have been in a little of a funk lately.  I have totally been letting my Daily To-Do's pass me by.  For example, I don't think I have swept the floor in four or five days.  And the litterbox?  Yuck.  But, today is a new day and I'm getting back on track.  Today will be a busy day, but I WILL get everything I can done.  Anywho, without further ado, here's this week's menu.

Monday:  We went out to eat for my mom's birthday.
Tuesday:  Roast with veggies
Wednesday:  Chicken Tortilla Soup
Thursday:  You're On Your Own
Friday:  Crockpot Salsa Chicken
Saturday:  Hobo Packets
Sunday:  Eating at my parents house!

    I'm going to have to try Chicken Tortilla Soup. Do you have a favorite recipe?
    And it's been ages since we made Hobo Packets - going to add this to my master menu list. Thanks for the inspiration!

    1. Hello! And thank you for the comment! I do have a wonderful and super yummy recipe for Chicken Tortilla Soup...and it very easy. Here it is:
      1 can cream of chicken soup
      3 cans chicken broth
      1 pound chicken (cooked and shredded)
      1 can Rotel

      Simmer all ingredients together in soup pot for 30 minutes. Serve with crushed tortilla chips and shredded cheese. I also like a dollap of sour cream on my soup, too. I hope you enjoy!!

      I have never made Hobo Packets. I saw the recipe on Pinterest and thought that it looked easy (which is the name of the game around my house, lol!). Do you do anything special with your recipe? I believe my recipe calls for hamburger meat, potatoes, carrots, onion, and Dale's sauce.

  2. We all need a goof off day. I had 2 goof off days last week but definitely paid for it on Sunday. I was cleaning most of the day.

    1. Hi! Thank you for the comment! I agree with you, we all need a few goof off days. In my effort to unclutter my life (physically and mentally), I tend to think that I have to get it all done no matter what. That thinking is probably what has gotten me in this situation in the first place. I see my overwhelmingly large "To-Do" list and then decide that there is no way it is all getting done, and then I decide to do nothing but watch Will and Grace reruns all day. But, that is why I started the blog. I am documenting my journey to a better and more simple life.
